- 1/2 Cup Unsalted Butter, room temperature
- 1/2 Cup Light Brown Sugar
- 1/2 Cup Sugar
- 1 Egg, room temperature
- 1 Teaspoon Vanilla
- 1 Cup All Purpose Flour
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Salt
- 1 Cup Quick Oats
- 1 Cup Chocolate Chips
Cut the butter into pieces and place in the bowl of a mixer.
Mix the butter with the paddle attachment until smooth.
Add the brown sugar and sugar. Mix until smooth. Scrape the bowl occasional to insure consistent mixing.
Add the egg. Mix until fully incorporated. Mix for an additional 2 minutes.
Combine the flour, baking soda, baking powder and salt. Add to the mixer. Stir together. Scrape the bowl to make sure the mix is consistent.
Add the quick oats, stir just to incorporate. Add the chips. Stir just to incorporate. Remove the bowl from the mixer and stir by hand a couple times .
Scoop into 2 inch balls. Place six cookies per sheet, they will flatted to about 4 inches.
Bake at 325 degrees for 12 minutes or until they are beginning to be golden at the edges.
